RICE DISHES for 3 NIGHTS#1

Day1: Pilaf/ Day2:Baked Rice/ Day3: Rice Omelet
Day1 Cook a Pilaf. Pilaf is easy to cook in a pan. You can put anything you want in a Pilaf. If you have shellfishes or some pieces of bacon, you may not need soup stock.
3 servings
  • Rice: 3 Cups (for 3 days)
  • Oil: 2 to 3 Table Spoons
  • Water: 3 Cups ++
  • Meat(thin sliced or minced), bacon, fish and shellfish: as you like
  • 1 small onion
  • Veggies(recommend: carrot, capsicum, tomato, peas, celery/ not recommend: potato, pumpkin): as you like
  • Salt, pepper: as you like
  • Soup stock: as you like
  • 1 Bay leave: If you find within free food
  1. Chop ingredients.
  2. Fry chopped onions until transparent in a deep frying pan or a stew pan over a low heat. Fry other flavoring veggies together.
  3. Fly chopped meat(bacon, fish, shellfish) for 3 minutes over a medium heat, then add rice.
  4. Fry rice for 3 to 5 minutes then add 3 cups of water and a teaspoonful of soup stock and stir. Maintain high heat to a boil.
  5. Reduce to a very low heat to simmer. Add a Bay leave and other veggies Taste before adding salt and pepper.
  6. Wait until the rice cooked. Do not stir. If the water evaporate before the rice cooked, add extra water not to be burnt. You can cover the pan, but watch out not to boil over.
Day2 Cook white sauce for a baked rice dish. Make sure the dish is OK in a microwave and an oven.

  • 2 to 3 cups of milk
  • 1 to 2 tablespoonful of butter
  • 1 to 2 tablespoonful of plain flour
  • salt and pepper: as you like
  • 1 to 2 tablespoonful of white wine: if available
  • a shake of nutmeg: if available
  • 3 to 4 tablespoonful of grated cheese
  • 1 tablespoonful of grated Parmesan cheese: if available
  • 1 to 2 tablespoonful of bread crumb: if available
  1. Stir cold milk, butter and plain flour in a pan for 5 to 10 minutes.
  2. Pre-heat the oven to 180 to 200 degrees.
  3. Stir milk, butter and flour till thickened over a low heat.
  4. Add salt, pepper, white wine and nutmeg.
  5. Stir well.
  6. Grease a baking dish. Place the last night's Pilaf on the dish. Microwave the Pilaf if possible.
  7. Put the sauce on the Pilaf. Don't heap up, otherwise it'll boil over.
  8. Top with grated cheese and crumb and put into the heated oven.
  9. Baked until the surface gets brown.
Day3 Cook an omelet.

  • 2 to 4 eggs
  • 2 to 3 tablespoonful of oil
  • salt and pepper: as you like
  • tomato sauce: as you like
  1. Pre-warm the leftover Pilaf in a microwave or a frying pan.
  2. Cook an omelet in a greased frying pan.
  3. If you are very good at cooking, wrap the Pilaf into the omelet in the pan.
  4. If it's difficult, top the omelet on the warmed Pilaf on the plate. Serve with tomato sauce.
You can make an perfect menu with soup and salad.

TOMATO SAUCE for 3 NIGHTS#2(04/2006)

Day1: Pasta with Tomato Sauce/ Day2: Sauteed Chicken/ Day3: Pizza Toast
Day 1 Cook Tomato sauce. If you don't mind, just have pasta with tomato sauce for 3 nights. But tomato sauce can be used in various ways. I'll give you 2 tomato sauce recipes. #1 is easier to cook. But ingredients for #2 are easily available compared to those for #1.
Tomato sauce #1 (Italian)
  • 1 or 2 can of tomato
  • 2 to 3 tablespoonful of olive oil
  • 1 clove of garlic
  • about 5 fresh basil leaves
  • salt and black pepper
  • soy sauce

  1. Put tomatoes and olive oil in a sauce pan.
  2. Add roughly cut garlic.
  3. Heat the pan till boiling. Stir occasionally.
  4. Reduce to low heat to simmer, add torn basils.
  5. Occasionally stir and simmer till the sauce becoming thick enough for you. Taste with salt, black pepper and a few drops of soy sauce as you like.
  6. Cook pasta of you choice and serve with the sauce.
Tomato sauce #2 (Japanese home made style)
  • 1 or 2 cans of tomatoes
  • 2 to 3 tablespoonful oil (olive oil is the best choice)
  • 1 clove of garlic
  • 1/2 onion (Use 1 if you don't want another 1/2 left)
  • salt and pepper
  • Warcester sauce as you like
  • 1-2 Bay leaves
  • nutmeg and allspice as you like
  • 2-3 cloves (If you like the spicy sauce, add more)

  1. Chop onion and garlic.
  2. Fry onion and garlic in a greased frying pan till onion becoming transparent.
  3. Add tomatoes and spices and simmer till the sauce becoming thick enough.
  4. Taste with salt, pepper. Add Warcester sauce or soy sauce as you like.
  5. Cook pasta of your choice and served with the sauce.
Day 2 Cook sauteed chicken. With the tomato sauce, the dish look better and more nutritious.
  • boneless chicken breast or leg
  • 1-2 oil (Olive oil is the best choice.)
  • several slices-1 clove garlic (When you cook the tomato sauce, you can leave garlic a little bit.)
  • salt and pepper
  • flour or corn flour as you like for coat
  • white wine as you like
  • tomato sauce
  1. If the meet is thick, slice into two, otherwise the meet can't cooked well.
  2. Slice garlic.
  3. Sprinkle salt and pepper on the meat. Coat with flour as you like.
  4. Fry the garlic in a greased frying pan with low heat.
  5. When it becomes aromatic, take the garlic out. Fry the meat at high heat until brown. Skin should be cooked first.
  6. Reduce to the low heat and fry till the meat cooked. (Option: You can cook the meat with white wine. Also, you can add tomato sauce and stew the meat.)
  7. Serve the meat with tomato sauce!
Day 3 Pizza toast with home made tomato sauce!
  • thick sliced bread
  • vegetables of your choice (onion, capsicum, corn, mushroom etc. Don't use watery veggies)
  • other fillings of your choice (bacon, ham, tuna, oil sardine...)
  • cheese of your choice as much as you want
  • tomato sauce (Thick sauce is better.)
  • pepper, pepper sauce as you like
  1. Slice veggies. Cut other ingredients as you like.
  2. Spread tomato sauce on the bread and put veggies and ingredients.
  3. If you need to cook the ingredients enough. Bake the bread in an oven before adding cheese on.
  4. Add cheese on the bread and bake it till the cheese becoming melt. To avoid cleaning up the oven after cooking, you can put the bread on foil for baking.
  5. Sprinkle pepper and pepper sauce as you like.
You can make an perfect menu with soup and salad.
